Can the group of you frame your needs and desires in written form, maybe with a petition or letter? Would a couple of you be willing to deliver it to your boss, as adults, and try to have an adult conversation about it? What happens next depends on her reaction. If she blows her top--and she sounds like the type to--you might have to implement an action plan; one where you, the group of you, begin to withdraw your cooperation with her rules and regulations. Let her feel a little pressure about getting her projects done. This will take some commitment and organization or your part, but you're already committed and organized enough to get the work out every day. Why not turn those qualities to your own benefit? Seems reasonable to me.
