I suspect you could explore similar routes for yourself. First, what are the Pennsylvania laws that cover your industry? Maybe they are better than you think, leaving only the question of how to get them enforced. Maybe you could raise the visibility of the need for such laws and get the wheels turning to enact them. Second, you could talk to your HERE local and your co-workers about the prospects of unionizing. If you were a union restaurant, ALL the terms of employment would be subject to negotiation rather than the whim of the boss. Third, you could explore a public pressure campaign aimed at the customers of your restaurant and the community around you. There's lots you can do. It's up to you to decide what efforts you want to put into it.
